Happy Friday!! I hope you are ready to launch into an excellent weekend. In my house, I go shopping on Fridays and use the weekend to prep food. By the time I get to Sunday night the fridge is filled with food that we can combine in different ways for our weeknight meals and packed lunches.
One of my favorites is this quinoa salad. Personally I don’t feel like quinoa tastes very exciting on its own. This is my go-to recipe for making it super tasty! You can eat it hot, room temp, or cold, it packs well, and it is a favorite with the family. I use white wine vinegar instead of red wine and it comes out yummy.
This recipe makes a ton so get your biggest bowl ready. My kids help by chopping up the peppers. So grad your ingredients on your next shopping trip and try this one out. Serve as a side with grilled chicken, skirt steak, or fish. It can also stand as a main dish with a nice chickpea salad on the side.
